Proper Cleaning

Use warm water and a small amount of dish soap to clean the board surface with a soft cloth or sponge. Avoid using anything abrasive that may be rough on the wood surface.

Don’t submerge the board.
Don’t put the board in the dishwasher.
Don’t place hot pans on the board.

Disinfect

White vinegar is a great way to easily disinfect the surface of your board. Make a mixture of two (2) parts water to one (1) part vinegar and apply to both sides of board. Simply wipe the solution on, let it sit for a few minutes, and rinse with water. Don’t submerge your board!

Deodorize

If you need to deodorize your board, I like this old school method. Sprinkle some kosher salt on the board. Then take half a lemon, place the cut side down, and give it a little squeeze to get the juice going. Scrub the board. Let it sit for a few minutes and then rinse with water.

Dry

After cleaning your board, always rub it down with a dry paper towel or cloth. You want your board to absorb as little water as possible. Let it sit until completely dry.

Maintenance

Once your board is clean and dry, place it on a cloth or paper towel. Rub both sides with food grade mineral oil and wax (I recommend Walrus Oil Cutting Board Oil) and let it sit overnight. If there is excess oil sitting on the surface the next day, you can rub it off.

(Once a month if your board is seeing a lot of use.)

Fuzzy Board

After a while, the top of your board may get a little fuzzy. This is normal. Moisture will eventually cause the grain of the wood to rise. To fix this issue, lightly sand the board with 220 grit sandpaper. Then wipe your board down with a moist cloth to remove the sawdust.
